Baked Chicken with Arroz Y Gandules

Arroz con Gandules translates to “Rice with Pigeon Peas” in English. It is a traditional Puerto Rican recipe served on special occasions and often around the holidays or family gatherings. The recipe is made by simmering rice with pigeon peas in a delicious broth flavored with salt pork and lots of different vegetables to achieve a side dish that is loved by many.

Ingredients
  

For Baked Chicken

  • 1 lbs chicken
  • 1 tsp chili powder
  • 1 tsp paprika
  • t tsp black pepper
  • 1 tsp salt

For Arroz con Gandules

  • 2 cups rice rinsed and drained
  • 2 tbsp safrito
  • 1 packet sazon
  • 1 small onions diced
  • 8 oz tomato sauce
  • 2 tbsp garlic minced
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 can gandules
  • 1 cup water

Instructions
 

For Baked Chicken

  • Preheat oven to 350 degrees.
  • Combine Seasonings, rub onto chicken pieces.
  • Baked for 20 minutes or until done.

For Arroz con Gandules

  • Add vegetable oil to rice pot over medium high heat. Add diced onions and garlic. Sautee until onion is soft.
  • Add gandules, salt, tomato sauce, water, sazon and sofrito to the rice pot. Stir until well incorporated.
  • Pour in the rice and stir. Heat until boiling. Stir to keep rice from sticking to the bottom. Be careful not to over stir. When the water has almost evaporated, turn the heat down to low and cover. Let sit covered for 15 minutes.
  • Stir once to loosen rice stuck to the bottom and cover again. Cook until rice is tender and fluffy.
